Waterkloof Sauvignon Blanc is the flagship wine from the property of the same name in Somerset West. Grapes come from two vineyards on the Schapenberg, these planted in 1995 and having a south-westerly aspect – yields are low at around three tons a hectare. In the case of the 2008, fermentation occurred spontaneously, 25% in old 600-litre barrels.
Waterkloof insist this is a wine capable of ageing and the 2008 didn’t disappoint last night. Subtle notes of white peach, golden delicious apple and green melon on the nose and palate. Rich and quite broad in structure with moderate acidity. A slight pyrazine bite on the finish to add interest. Very little sign of development. Not exactly goose-bumps inducing but sophisticated and satisfying to drink.
